our thanksgiving contribution

This year we're spending Thanksgiving with the Eatons in Tallahassee. Eaton family tradition has it that everyone pitches in to help make Thanksgiving dinner. Tiffany is supremely suited for this - coming from a large family of cooks - and came aptly prepared with a recipe for her Pumpkin Cheesecake.

Using a springform pan I was directed in the making of the graham cracker crust, which packed and flattened nicely. Tiffany mixed together and beat a rich, creamy filling and we put the cheesecake in the oven to bake.

After a stint of Mad Men with the parents and Diane we turned off the stove and let the cheesecake cool, slowly, for hours; this prevents surface cracking.
